特別是29→30→31→1

There are many different ways to make it, but they all have 2 plates. Each digit has its own plate. Usually, when it moves from 31>01, only the 3 will jump to 0 (or blank). The 10th digit plate goes by 0, 1, 2, 3, and the single digit goes from 0-9. Some companies like AP has a differnt design, so 20 was printed out. It's hard to explain it. There's a picture in the Feb Watchbus, if you can get a copy.
btw, I posted a link earlier in a different thread which talks about the new ETA big date. It uses 2 date plates for the digits, and it rotate around the edge of the movement. In other words, the date window has to be at 3 o'clock. Here's an example from Lange:
